They did it! Universidad San Ignacio de Loyola (USIL), San Ignacio College and chef Rosa Polo set a Guinness World Record for the world’s largest bowl of quinoa in Miami, Florida (USA). It was prepared using three colors of Peruvian quinoa–white, black and red–and weighed 716.65 kg (1580 lbs).
With political and academic authorities, as well as members of the business community in Peru and the United States in attendance, the enormous bowl of quinoa was presented around noon on October 28 at Florida International University’s Frost Art Museum in Miami, Florida, in the presence of Guinness World Records adjudicator Carlos Martínez.
“This is one of the best organized Guinness World Records events ever (…). It is a very international event, because it’s about Peru, but it also involves Miami, with an ingredient that brings together an entire region,” remarked the official judge upon announcing the setting of the record.
“This is a historic day for good nutrition and healthy eating. We want to encourage the entire world to eat Peruvian quinoa. It’s a highly versatile grain that can be used to prepare different dishes, desserts and beverages. It’s also a very nutritious food that is ideal for fighting many diseases, according to research conducted by the FAO, WHO and NASA,” commented Raúl Diez Canseco Terry, founding president of USIL and one of the promoters of this record.
The executive president of USIL, Luciana De la Fuente de Diez Canseco, pointed out that the event was a tribute to Peruvian farmers, without whose work and sacrifice this crop would not have transcended the last 14,000 years. She recommended eating quinoa as an ideal food for good health.
Participating in the achievement of this historic milestone were the Peruvian consul general in Miami, Ambassador César Bustamante; the mayor of the city of Miami, Tomás Regalado; the president of Florida International University, Dr. Mark B. Rosenberg; the founding president of USIL, Raúl Diez Canseco Terry; the executive president of USIL, Luciana De la Fuente de Diez Canseco; and the executive director of San Ignacio College, Dr. Omar J. Pagán, among other city authorities, politicians, and members of the business and academic communities.
The quinoa was prepared by a group of USIL and San Ignacio College chefs and students, together with chef Rosa Polo, in an enormous bowl 5 meters long, 1.5 meters wide and 15 cm high. A team of specialists in agro-industrial engineering, food industry engineering, nutrition and logistics provided technical support.
Following the ceremony, close to 6000 servings of quinoa from the enormous bowl were donated to the Florida Rescue Mission and Camillus House, both charitable institutions based in Miami, as well as to homeless people on the streets of Miami.
A tribute book
During the activity, a book titled Wonderful Quinoa, which explains the nutritional value and multiple benefits of the so-called “golden grain” from the Andes, was presented. The book was written by Dr. Teresa Blanco de Alvarado-Ortiz, a Peruvian expert in nutrition and university professor, with the support of a research team made up of academics and chefs from Universidad San Ignacio de Loyola. This project was headed by Luciana De la Fuente.
Wonderful Quinoa is a masterwork published in English and Spanish, which traces the knowledge of this grain through its long history, as the secrets of its cultivation, its nutritional wealth, and its health benefits were discovered.
The book also includes a chapter dedicated to the variety of dishes that can be prepared with quinoa, as well as other sections on the international attention Peruvian quinoa has gained and publications about it.
Peru is currently the leading exporter of quinoa. During the first five months of 2015, the country exported 12,454 metric tons valued at US$ 52.2 million, according to PromPerú figures
